<center>During spring break I took a trip out to the west coast. I started in New Mexico and went through Utah, Arizona, and ended up in Colorado before I flew back to get back into work. I only had a week, but jam packed my week with the most amazing vistas and great time with friends. <br>
<br>
I know that I have taken a long time away from blogging, and am not quite sure where blogging fits into my life anymore, or if it does...but I do want a place to document this trip, and so over the next few days I will be uploading the photos here. <br>
<br>
Also, to my German followers: you are so sweet to wonder where the heck I went! I am still here, and loving life, even if my online presence is dwindling. <br>
<br>
Speaking of...I am on instagram: danielleruckus is my username. That is one place I am still updating!<br>

I am going to be changing up a little bit what I post about, and I am not quite sure how I want to move forward...but for now, here is a link to a video I found to be incredibly inspirational. </center><center><br />

</div><div class="separator" style="clear: both; text-align: center;">You know how some weeks or months are just way harder than others? Life is funny that way. A few weeks ago I was feeling <b><i>completely</i></b> on top of the world, and the weeks proceeding it have been some of the hardest times of my life. Maybe I am lucky to not have so many horrible things happen all at once to me before this whirlwind of suck....or maybe I just feel it is so awful because I am in the thick of it. I think that saying about hindsight being 20/20 is true...you have time to distance yourself from the pain, heartache, loss, fear, and letdown in order to gain clarity. </div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;">It has been hard to post anything even remotely uplifting on this blog, and so I took a little bit of a break as to not subject all of you to my absolute lack of joy...because, let's face it.... that's no fun! </div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;">These are photos of some of the things that have helped me through this time...and trust me, it has been a rough ride. It would be a shame to allow rough circumstances and events around me to completely bring me down. As hard as it may be, finding the silver lining is what keeps us going... </div><table align="center" cellpadding="0" cellspacing="0" class="tr-caption-container" style="margin-left: auto; margin-right: auto; text-align: center;"><tbody>

</div><div class="separator" style="clear: both; text-align: center;">My particular decision during the holidays is to either make each thing that I give (paint, bake, make, sew, crochet, draw, print etc)...or make sure that I buy from artisans who hand make their goods. It feels so much better to give something that you know was made with love and care, and that the person who made your gift was treated fairly (so important!). The only exception I make to handmade is books: because, lets face it...books are wonderful and lovely and great, and no one is handwriting a million of their awesome books, right? If you can: buy from your local bookstore. The extra money spent and not saved on Amazon or other big box stores goes directly into your community...and doesn't that just feel oh so nice? </div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjkA-aSJBh88Mhe8h1UbX_uqfnFacECnqTyUO4s9Ac4SUCz6XXUY_HVyUO5GR4WAKxMy58S4wxEkmX2fF4lVdTwxfcefu09bcHBqY7NU1U8A4HCiqmJLAd4lTwx6xmupBHwiLmyvZQTIG1W/s1600/Screen+shot+2011-11-22+at+4.29.51+PM.png" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="236" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjkA-aSJBh88Mhe8h1UbX_uqfnFacECnqTyUO4s9Ac4SUCz6XXUY_HVyUO5GR4WAKxMy58S4wxEkmX2fF4lVdTwxfcefu09bcHBqY7NU1U8A4HCiqmJLAd4lTwx6xmupBHwiLmyvZQTIG1W/s640/Screen+shot+2011-11-22+at+4.29.51+PM.png" width="640" /></a></div><div style="text-align: center;"><br />

wet eyes of security lost<br />
she runs the comb through eyelashes clumped with mascara<br />
lights camera splashes<br />
copper tint on her eyes, copper paint on her nails<br />
those bitten with anxiety<br />
those scratches on his back<br />
how funny what ordinary things become weapons<br />

the books and to do lists and dishes pile up<br />
and she steps over laundry to step into the cool water<br />

it just won't wash away<br />

Being a School Teacher for years I have gotten increasingly more despondent over the American teaching of Columbus, the Native Americans and what Thanksgiving is all about. Some schools have been worse than others throughout the years. Some schools completely omit the story, which I feel sometimes is more truthful than what we did growing up. </div><div class="separator" style="clear: both; text-align: center;"></div><div class="separator" style="clear: both; text-align: center;">I remember growing up making "Indian" and "Pilgrim" costumes out of paper bags and wearing them to school for a big Thanksgiving feast. Later, when I was enlightened by the more honest story of our Nation's beginnings, I was so distraught that my Teachers participated and had us participate in such nonsense. In fact, I was downright hurt that these Teachers who I trusted so much would just flat out LIE to us. </div><div class="separator" style="clear: both; text-align: center;"></div><div class="separator" style="clear: both; text-align: center;">That being said, Thanksgiving is a hard time for me and I have gone back and forth as to whether I would celebrate it at all in fact...but it is hard not to take some time to eat good food and spend time with family, friends and loved ones. </div><div class="separator" style="clear: both; text-align: center;"></div><div class="separator" style="clear: both; text-align: center;">I like to see Thanksgiving as more of a celebration of the Harvest. So my sister, her husband and our friends Marek and Kristyna did just that! We used local, in season vegetables, and cheated with a Tofurky and made a yummy feast to enjoy with one another. </div><div class="separator" style="clear: both; text-align: center;"></div><div class="separator" style="clear: both; text-align: center;">My sister and her husband found out that their gas was out at their complex, and so we had to get a little bit inventive with the preparation of the feast! </div><table align="center" cellpadding="0" cellspacing="0" class="tr-caption-container" style="margin-left: auto; margin-right: auto; text-align: center;"><tbody>

We talked about how sometimes when you read, you do not get all of the information the first time around. I used a book I had just re-read and finished this morning on my commute as an example. I have definitely read my share of my favorite books time and time again. Go ahead and ask me how many times I have read <a href="http://www.animalvegetablemiracle.com/">Animal Vegetable Miracle.</a> I cannot get sick of Kingsolver's writing or the story; and the inspiration that I draw from that book each time I pick it back up is infectious! <br />
<br />
While I had read <a href="http://www.amazon.com/Martha-Rules-Stewart/dp/1594864705">The Martha Rules</a> once before, and maybe even twice before, I knew that there is valuable information in that book that I should certainly be reminded of.<br />
<div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEg2PtJwqRs-7ybVLuG2mLUpfj1mN2wKIkxi8LsUWZYKqkQug5eUIy7wB1fCblwDUsULMGfjNNTILhpsMPFdJjKGoeIZyXgC4KzzFszdpTSKfDzpWIpbq4NTuvjZ5cCFyZqzo9Bi5qWXsBHB/s1600/the_martha_rules.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="640" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEg2PtJwqRs-7ybVLuG2mLUpfj1mN2wKIkxi8LsUWZYKqkQug5eUIy7wB1fCblwDUsULMGfjNNTILhpsMPFdJjKGoeIZyXgC4KzzFszdpTSKfDzpWIpbq4NTuvjZ5cCFyZqzo9Bi5qWXsBHB/s640/the_martha_rules.jpg" width="512" /></a></div><br />
I remember when Martha Stewart had gotten into all of those lengthly legal battles involving her personal portfolio and perhaps some unwise or misguided decisions. I felt as if she was being made an example of, and quite frankly I felt she was targeted even more because she is a woman in a place of high power. She is also a very visible woman, who inspires many others and this situation had the potential to absolutely crush her career, and the empire she had built up by elevating the Art of homemaking into something to be revered and respected.<br />
<br />
Even though I was aware this type of situation could potentially halt all of the successes she had made, I had a feeling Martha would come through shining brighter than ever. <br />
<br />
<div style="text-align: center;"><i><b><span class="Apple-style-span" style="font-style: normal;">Martha has the unique gift of creating beauty where others see work. She has the ability to bring together and manage a design team of incredibly talented people and she has the charisma to inspire and empower others around her. She is ultimately a very gifted teacher. </span></b></i></div><div style="text-align: center;"><i><b><span class="Apple-style-span" style="font-style: normal;"><br />
</span></b></i></div><div style="text-align: left;">As the R train neared Times Square, and I was finishing up the book, I re-read a paragraph that I would like to share with you. </div><div style="text-align: left;"><br />

When I was doing my student teaching in Rhode Island, I used to have to literally wake up at 4:25 to get to work. The High School that I was teaching at started school at 6:45 AM (don't even get me started on that), and it was a bit of a commute from where I lived in Providence. <br />
<br />
Now that I am teaching in NYC, my commute is just as daunting, and my alarm goes off almost as early. I usually try to sneak in some extra minutes and have been known to wake up as late as 5:20 or so (which, trust me...is a late start). My mornings are already packed with a quick yoga routine, some lifting for my arms, tea drinking on the bench by the lake, and a walk with Malomar. Whenever I have to bring Malomar back inside and head off to work, I wish I had just a few more minutes to enjoy my morning. <br />
<br />
<div style="text-align: center;">So when I decided to wake up an extra 20 minutes early each day this week, I was totally distraught to realize that set me up for a wakeup time of 4:40 AM. <i>Maybe other people wake up this early on the regular, but sometimes I really feel like I am an anomaly</i>. </div><br />
<div style="text-align: center;"><b>Each morning I am committed to seeing what I can accomplish in that extra 20 minutes. </b></div><br />
Yesterday morning it was making 2 sandwiches. One for breakfast and one for lunch. Okay, so I cheated a little bit because I did marinate the tempeh overnight...but without those extra minutes I really would not have been able to assemble the sandwiches. <br />
<br />
<div style="text-align: center;"><b>tempeh "bacon"</b></div><div style="text-align: center;"><span class="Apple-style-span" style="font-family: Arial, Tahoma, Helvetica, FreeSans, sans-serif; line-height: 18px;"><span class="Apple-style-span" style="color: #666666;">1 package of tempeh </span></span></div><div style="text-align: center;"><span class="Apple-style-span" style="font-family: Arial, Tahoma, Helvetica, FreeSans, sans-serif; line-height: 18px;"><span class="Apple-style-span" style="color: #666666;"></span></span><span class="Apple-style-span" style="font-family: Arial, Tahoma, Helvetica, FreeSans, sans-serif; line-height: 18px;"><span class="Apple-style-span" style="color: #666666;">1/3 cup tamari</span></span></div><div style="text-align: center;"><span class="Apple-style-span" style="font-family: Arial, Tahoma, Helvetica, FreeSans, sans-serif; line-height: 18px;"><span class="Apple-style-span" style="color: #666666;">2 tbsp agave</span></span></div><div style="text-align: center;"><span class="Apple-style-span" style="font-family: Arial, Tahoma, Helvetica, FreeSans, sans-serif; line-height: 18px;"><span class="Apple-style-span" style="color: #666666;">1/2 tbsp sesame oil</span></span></div><div style="text-align: center;"><span class="Apple-style-span" style="font-family: Arial, Tahoma, Helvetica, FreeSans, sans-serif; line-height: 18px;"><span class="Apple-style-span" style="color: #666666;">1 tbsp apple cider vinegar</span></span></div><div style="text-align: center;"><span class="Apple-style-span" style="font-family: Arial, Tahoma, Helvetica, FreeSans, sans-serif; line-height: 18px;"><span class="Apple-style-span" style="color: #666666;">1 tsp paprika</span></span></div><div style="text-align: center;"><span class="Apple-style-span" style="font-family: Arial, Tahoma, Helvetica, FreeSans, sans-serif; line-height: 18px;"><span class="Apple-style-span" style="color: #666666;">a few dashes of freshly ground pepper</span></span></div><div style="text-align: center;"><span class="Apple-style-span" style="color: #666666; font-family: Arial, Tahoma, Helvetica, FreeSans, sans-serif; line-height: 18px;"><i>You can also add 1 tbsp liquid smoke to this recipe, but I didn't have any on hand so I skipped that step). </i></span></div><br />

Last year I took an impromptu trip over to Paris, completely on a whim! It was great to get out of my city, into a much warmer city and explore. France is one of my favorite places to visit, but I think for my next trip I am going to head somewhere new...and somewhere warm! <i>(Sidenote: deciding last minute to take a trip to France from NYC means you can get a ticket for dirt dirt cheap...just a little FYI). </i></div><div style="text-align: center;"><br />
</div><div style="text-align: center;">As the days get colder and the nighttime takes over before I am even out of work, I am dreaming of a warm getaway filled with yoga and picnics and lots of sketching and reading. </div><br />

</div><div style="text-align: center;">Another beautiful week has passed by in NYC which means I get to gear up for a weekend trip to Rhode Island! </div><div style="text-align: center;"><br />
</div><div style="text-align: center;">The end of my week always go by even better when I get to spend Thursday night with my sister and her husband in Westchester. Last night my sister shared a fabulous Eggplant Mole dish with me. I can't wait to get the recipe from her and then share it with you! I love having like-minded healthy eaters to share recipes with. </div><div style="text-align: center;"><br />
</div><div style="text-align: center;"><b>Here are some great things from this week that I wanted to share with you!</b></div><div style="text-align: center;"><br />
</div><div style="text-align: center;">At a small cafe in Lake Placid, the owner put out spaghetti stirrers for coffee which are compostable. I love this idea! I usually forgo stirring my coffee ingredients together because using those little red plastic sticks for about 2 seconds and then sending them to the landfill just seems utterly insane to me. </div><div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjjQRjpRqY4w9ucigpyhgPhsb_ibvFkYmsXVnTOM6jhMwG5LNUZ2zT6iamW2v4QiUUnZmmQiWTDSNEst36iTwUBwhPMBAOfIdU2kjZ70DBHHt7WecbgmqCNp6493C8dBx9szyvNTMZpb7OV/s1600/1320507420520.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="640" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjjQRjpRqY4w9ucigpyhgPhsb_ibvFkYmsXVnTOM6jhMwG5LNUZ2zT6iamW2v4QiUUnZmmQiWTDSNEst36iTwUBwhPMBAOfIdU2kjZ70DBHHt7WecbgmqCNp6493C8dBx9szyvNTMZpb7OV/s640/1320507420520.jpg" width="480" /></a></div><div class="separator" style="clear: both; text-align: center;">The owner left the red sticks as an option, who knows why! I guess people are really afraid of change. </div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;"><b>Make it your own:</b> <i>Why not break the pasta in half and display it in a nice glass jar. I wholeheartedly believe that people are much more likely to use something if it is presented in a beautiful way. </i></div><div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEipR5OkYuSTE7yL1WMunNCyzrInsvc7w-4IBjbFjFHkMqTQF33IhcNNAz19VJjVX9WwwoHvP6zw_rcbjM4bAuFkqk4zAOWaiYDZPagNeA-7Ikn6QPzpX2g5Kvl7Tjsd4fTpZFcHFd4CXJTK/s1600/Screen+shot+2011-11-11+at+2.01.34+PM.png" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="638" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEipR5OkYuSTE7yL1WMunNCyzrInsvc7w-4IBjbFjFHkMqTQF33IhcNNAz19VJjVX9WwwoHvP6zw_rcbjM4bAuFkqk4zAOWaiYDZPagNeA-7Ikn6QPzpX2g5Kvl7Tjsd4fTpZFcHFd4CXJTK/s640/Screen+shot+2011-11-11+at+2.01.34+PM.png" width="640" /></a></div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div style="text-align: center;"><b> ~~~</b></div><div class="separator" style="clear: both; text-align: center;">Students in Bogato Columbia painted their necks for a protest about Education Reform. Their signs read "We have the right to be outraged" and "Excellent education for all!"</div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;">The students are protesting their government's plan that proposes private funding for public institutions. As a Teacher at a Charter School, I am not so sure I agree with them, but I always applaud those willing to stand up and speak for what they believe in. </div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;">I also just can't get over how visually striking this is. </div><table align="center" cellpadding="0" cellspacing="0" class="tr-caption-container" style="margin-left: auto; margin-right: auto; text-align: center;"><tbody>

Plus, I didn't get sick so I guess that's a plus! <i>Still trying to figure out what is triggering crazy stomach aches after each meal. </i><br />
<br />
<div style="text-align: center;">I wish I could recommend this place for the ambiance and the delectable food, but I doubt I can do either. <br />
<b>All I can say is....You seriously have to go here. </b></div><br />
Milon is located on 1st avenue right adjacent to the always lovely Caravan of Dreams. You can't miss it. There are 3 Restaurants total, two upstairs and one downstairs and there are men outside screaming and yelling at you to pick <b><i>their</i></b> restaurant for your dining needs. Go up the stairs and to the left and enter...well...I don't know...enter a sort of hellish nightmare in a space as big as an airplane, no overhead room and packed to the brim with the most amount of lights ever. How this place is not a fire hazard, I don't know.<br />
<div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEg6AXYl5uKnibsvqN_DNzt8qRgKrh9tHezbRpSseAHQA9llSNKH7e7uX053sYCn7W4295L1YvuEQdI2LJVLw1VChCWTBUdAspIsXa_d8eOdQu4wlu7NaVmOvfxAxEGdT0ds1NpuOBOZDS9l/s1600/DSC_0205.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="424" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEg6AXYl5uKnibsvqN_DNzt8qRgKrh9tHezbRpSseAHQA9llSNKH7e7uX053sYCn7W4295L1YvuEQdI2LJVLw1VChCWTBUdAspIsXa_d8eOdQu4wlu7NaVmOvfxAxEGdT0ds1NpuOBOZDS9l/s640/DSC_0205.JPG" width="640" /></a></div><div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEikrPSbZyTGPCny3JGp-XUkgnyrROpsM2fFkPUM0C8vAQe1PqlFwGLO7X6ZzszY0V_QlI6YlgY1g5oN3r98DWNxuZfdcdu5zpXm3FfWm5M8ipo6Oo_XKmwaH61TKngk_FoABOi4HSchCqgj/s1600/DSC_0225.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="424" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEikrPSbZyTGPCny3JGp-XUkgnyrROpsM2fFkPUM0C8vAQe1PqlFwGLO7X6ZzszY0V_QlI6YlgY1g5oN3r98DWNxuZfdcdu5zpXm3FfWm5M8ipo6Oo_XKmwaH61TKngk_FoABOi4HSchCqgj/s640/DSC_0225.JPG" width="640" /></a></div><br />
I felt like a video may be the best way to share the craziness with you. Dominic took a video with his phone, so pardon the poor quality...at least you can see how ridiculous this place is. <br />
<br />
Tip: say it is your Birthday and the lights flicker on and off and crazy Birthday music plays. Let's just say it was a lot of people's "Birthdays" that night. <br />
<br />

<br />
The only thing that remotely saved this place in terms of my tummy were the Banana Pakoras, which I had never had before. They are like a fried plantain basically, but with the tamarind sauce on them, they are pretty freakin' tasty. If nothing else, go there, say it's your Birthday and order these. You won't be disappointed. <br />
<div style="text-align: center;">Well, maybe you will be disappointed but you will definitely have had an experience!</div><br />

A heck of a lot cooler than paying 450 for it...but do what you want guys. </div><div style="color: #7c7c7c; font-family: Arial, Tahoma, Helvetica, FreeSans, sans-serif; font-size: 15px; line-height: 20px; text-align: center;"><br />

They are in love. <br />
Deal with it. </div><div style="color: #7c7c7c; font-family: Arial, Tahoma, Helvetica, FreeSans, sans-serif; font-size: 15px; line-height: 20px; text-align: center;"><br />

I was pretty sure that the drive was absolutely beautiful, if only I could see through the pitch black. I'm not going to lie, I love driving at night and am always up for adventure, but I was a little worried as my little Cabrio hesitated and protested on some of those big hills. I love all of the colors and textures in nature and the combination of new growth with the death and renewal that happens in the Fall. The leaves turn colors and fall to the ground to fertilize and compost new growth, the nutrients pouring back into the land. I think Fall is a lovely time of year, and this process is absolutely beautiful to me. </div><div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEj0G0YAB2nUyzZllQrCpx15UWz2AcMihasZSryJWbjcWdHufSIWyJ8Zx2OQhakSxVvmpdXFgefdUG-4Pm0IYtz-1d7vS1xQa74WtRqbbD90XD171RHcg2919H4fPsBg4YwCetEy5oGvC6_Q/s1600/DSC_0057.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="424" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEj0G0YAB2nUyzZllQrCpx15UWz2AcMihasZSryJWbjcWdHufSIWyJ8Zx2OQhakSxVvmpdXFgefdUG-4Pm0IYtz-1d7vS1xQa74WtRqbbD90XD171RHcg2919H4fPsBg4YwCetEy5oGvC6_Q/s640/DSC_0057.JPG" width="640" /></a></div><div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEh5pOCmI7-KKOmsut50j8DuvJRTskw-_Bm1DYki93oAMVfhdjdNHgCAGEnvjNRMvotEf20MfA-xs54PyVmiknmFJ3ZWB7D3Q0oDFOMCObXU_py8q7YCHjvUqOjjJk_edB3OAEOECDEvvoK7/s1600/DSC_0067.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="424" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEh5pOCmI7-KKOmsut50j8DuvJRTskw-_Bm1DYki93oAMVfhdjdNHgCAGEnvjNRMvotEf20MfA-xs54PyVmiknmFJ3ZWB7D3Q0oDFOMCObXU_py8q7YCHjvUqOjjJk_edB3OAEOECDEvvoK7/s640/DSC_0067.JPG" width="640" /></a></div><div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgraMfIk-V6FeUG0ZXYf_B6-poSNB98CwBBIsNxwwemEIUz9MdeJ9_NYcwDjbw5dPmUlVdbItu3T23Mzt4nTpMc-fQdoF4o0KFRv4WoayM-poYrD2VKxxqCAzCpPriqYhCSeptykxD6BpR7/s1600/DSC_0070.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="424" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgraMfIk-V6FeUG0ZXYf_B6-poSNB98CwBBIsNxwwemEIUz9MdeJ9_NYcwDjbw5dPmUlVdbItu3T23Mzt4nTpMc-fQdoF4o0KFRv4WoayM-poYrD2VKxxqCAzCpPriqYhCSeptykxD6BpR7/s640/DSC_0070.JPG" width="640" /></a></div><div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEi6m7j6h0Cw9U4zaNaunM4SZxOyPqPFL5x2asWm_UPByIbWqoZfAjKGX6lwKGevSpkoxCPTOLPCKghA3fRkMyqq_hORomkPpB6mYrOqg5ODi6nq239EZfvOW_5n5yQcQAzwmGhF-0_RJbBs/s1600/DSC_0073.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="424" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEi6m7j6h0Cw9U4zaNaunM4SZxOyPqPFL5x2asWm_UPByIbWqoZfAjKGX6lwKGevSpkoxCPTOLPCKghA3fRkMyqq_hORomkPpB6mYrOqg5ODi6nq239EZfvOW_5n5yQcQAzwmGhF-0_RJbBs/s640/DSC_0073.JPG" width="640" /></a></div><div class="separator" style="clear: both; text-align: center;"><br />

I battle back and forth often between eating local food and trying to keep as much variety in my diet despite the efforts it may take to get an avocado or orange my way in NYC. </div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;">I do have a bit of a confession to make. I am a vegan who doesn't actually like salads. It is a common theme for someone to say, "Oh, we can go to this restaurant, there are great salads there." and for me to turn my nose up and immediately reject the idea for another place...please please don't tell me I am going to eat a salad for dinner! </div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;">The book, <a href="http://www.amazon.com/Raw-Food-Real-World-Recipes/dp/0060793554">Raw Food Real World</a> changed my whole world around salads, and provided me with my absolute favorite salad dressing. I literally get so excited to eat a salad when I know I am putting this refreshing and creamy dressing on it. I will still forgo the restaurant salads with their often processed, or just plain balsamic (yuck!) dressings...but salads have become a very common and healthy lunch or even dinner for me armed with this recipe!</div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;">I woke up early the yesterday morning, and whipped up some of my favorite dressing as I drank chai tea (I am trying to cut back on coffee...we'll discuss that later). </div><div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgA9GPHfj7QXyG5qo2v_Juvpgf3cH6f1QplQZF2oeiyRYDRPp8MuYli9yx9QftEtU-3GngY9ggP72abs1ELOPjWsE2T_dN9bK5h6f_a0oeiRYqwP6Q3d8J-7WeotsdeXNekrcNHMFM6yZd8/s1600/DSC_1798.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="424" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgA9GPHfj7QXyG5qo2v_Juvpgf3cH6f1QplQZF2oeiyRYDRPp8MuYli9yx9QftEtU-3GngY9ggP72abs1ELOPjWsE2T_dN9bK5h6f_a0oeiRYqwP6Q3d8J-7WeotsdeXNekrcNHMFM6yZd8/s640/DSC_1798.JPG" width="640" /></a></div><div class="separator" style="clear: both; text-align: center;"><br />

Their cute costumes plus some selective phone photos makes it so I finally can share the adorableness that I get to be around each day! </div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;">I went to work as Frida Kahlo, which connected the students to our current Art Curriculum as well as our study of Mexico and Dia de los Muertos. I didn't go full unibrow, I guess because I am a wuss, but they still got it! I wore a beautiful vintage dress that I picked up at <a href="http://abeautifulmess.typepad.com/">Elsie's</a> shop in Missouri, <a href="http://shopredvelvet.com/">Red Velvet</a>. </div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;">The dress is absolutely amazing and I was so happy to have an occasion to wear it. I also picture myself wearing it by a bonfire heating up vegan s'mores. SOON!</div><div class="separator" style="clear: both; text-align: center;"><br />

<div style="text-align: auto;"><br />
</div></div><div style="text-align: center;">I set out the other week to make my own hazelnut spread and vegan crepes and I had this idea that they would come out perfect and amazing from the get go. It's call envisioning and it ALMOST worked. My idea was to make a completely unprocessed crepe, and I will still be working on that...but for now I give you a vegan crepe using Earth Balance. I will let you know when I get it down without any processed ingredients! </div><div style="text-align: center;"><br />
</div><div style="text-align: center;"><i>Some things I learned while experimenting: I found that if I heated first batch of crepes (made without earth balance) in the oven, I was able to get a weird crispy like desert but it certainly didn't taste the way I want my crepes to taste. I realized that maybe next time I will try to let my crepes sit in the cold for a bit longer and set-up before busting them onto the pan and trying to make crepes with them. This MAY be a solution, we will see! </i></div><div style="text-align: center;"><br />
</div><div style="text-align: center;">Here is my finalized recipe. You have to be a little patient and plan ahead of time because the spread tastes a little while to make, but it is so worth it. If you really love hazelnut spread, double the recipe...it will keep in the refrigerator for about a month!</div><div style="text-align: center;"><b>~~~</b></div><div style="text-align: center;"><br />

<b><br />
</b><br />
<b>Hazelnut Spread Ingredients: </b><br />
<b><br />
</b><br />
<b>2 cups whole raw hazelnuts</b><br />
<b>1 cup powered sugar (you will need to make this by pulverizing raw sugar in a food processor until it turns into powder: easy peasy). </b><br />
<b>1/4 cup cocoa powder </b><br />
<b>1/4 cup nut oil or evoo</b><br />
<b>1/2 tsp pure vanilla </b><br />
<br />
<b>Prework</b>: Make the powdered sugar by pulverizing raw sugar in your food processor, you may need a little more than a cup but start with a cup and add more as you need. I usually make a bunch of this and store it in the pantry.<br />
<br />
1. Preheat oven to 350 degrees. <br />
<br />
2. Place hazelnuts on a baking pan and toast for about 15-20 minutes until the skins turn black and look papery. At about 10 minutes, be sure to shake the tray to ensure that all areas of the nuts are being toasted equally. <br />
<br />
3. Place the hazelnuts in a cool kitchen towel and using oven mitts hold the towel and rub the nuts until most of the skin comes off. If you do not wear mitts, this will suck...so trust me, wear mitts. Some of the skins may remain, don't drive yourself crazy over this, just try to get most off as the skins will make your hazelnut spread bitter.<br />
<br />
4. Process the roasted nuts in a food processor or Vitamix for about 5 minutes. Scrape down the sides as you go. It is going to look like the nuts are attacking your blade and forming a union, keep spinning those blades, after a while the hazelnuts will give in and disperse, turning from a solid mass of hazelnut protestors into a creamy butter.<br />
<br />
5. Once the nuts are smooth and creamy, add the sugar, cocoa and vanilla and mix well. Slowly add the oil in as the blades are running to emulsify the mixture and so the oil is distributed evenly.<br />
<br />
6. Transfer the mixture to a glass, airtight container but do not refrigerate yet!<br />
<br />
<b>Making the Crepes:</b><br />
<br />
Pour out a small amount of the crepe batter onto very lightly oiled or nonstick pan over medium heat. <br />
<br />
Let batter spread out and heat until you start to see bubbles (think pancake but way thinner). When bubbles are formed, use a large spatula to flip the crepe and heat the other side. <br />
<br />
Once both sides are heated, turn heat down to low or medium low and add hazelnut spread and sliced banana. <br />
<br />
After spread has melted, fold over the crepe while still on the pan, flip and heat for a few seconds more and then transfer to a plate.<br />
